Our new coffee from Brazil is grown in the Cerrado region of the state of Minas Gerais. Cerrado is a high, semi-arid plateau surrounding the city of Patrocinio, midway between Sao Paulo and Brasilia. It is naturally processed, meaning the coffee cherries are dried on patios. Green (unripe) cherries are carefully sorted prior to drying. This gives this coffee a smooth uniform flavor which is nutty with some light fruit notes. We roast this coffee as a lighter medium roast.
